Thursday Feb 23rd Knife Skills Class and Food Tasting 7:00pm-8:45pm
Knowing how to use knives skillfully is the foundation of all cooking. Wielding a knife correctly saves you time and frustration in the kitchen. It is also safer. In this class, you will learn:
- how to slice, dice, and chop in the safest and most efficient manner
- how to sharpen knives and handle them correctly
- what to look for when buying a knife
- we'll work with: onions, leeks, carrots, cabbage, pinapple, winter squash, herbs, swiss chard, mango, avocado, celery
This is a hands-on class. Please bring along your favorite kitchen knife and chopping board. There will be extra knives and chopping boards on hand for those who need them Light snacks and herbal teas will be served

Sat March 10 Spring Activities in the Organic Vegetable Garden: Starting Seeds Indoors, Growing Greens & Cool Season Veggies, Building Raised Beds and Soil Testing & Improvement 9:30-11:30am
What you will learn how to:
- understand the most important principles in organic gardening
- perform a soil test & improve the soil in existing or new gardens based on the findings
- establish a new garden bed - site selection and raised bed construction will be addressed
- direct seed cool season veggies into the garden in March and April. Kale, aruglua, peas, spinach, carrots, beets, turnips, mustard greens, lettuce, chard, radish, cilantro, dill, broccoli rabe
- determine the best seed companies and growers to buy from and why
- begin seedlings indoors for warm season veggies like tomatoes, cucumbers, eggplants, basil, peppers
This class is different than Organic Veggie Gardening 101 on 4/21. The focus will be on planting spring vegetable and herb seeds directly into your garden in March and April, starting seedlings indoors for warm weather vegetables and building raised beds. These topics are not addressed in the class on 4/21.
