Dark Chocolate Mint Butter Cups

Dark Chocolate + Mint.  Need I say more? 

These mint cups don’t require a whole lot of effort or skill to whip up.     

If you’re unfamiliar with coconut butter (aka coconut manna), it is the meat of the coconut ground into a butter, like peanuts are ground into peanut butter.  It is divine.  I also use it in smoothies as a healthy source of fat.

Melting the coconut butter is the one thing that you want to take the most care with.  It melts quickly and burns easily.  Use a minimal amount of heat for a short amount of time – don’t walk away from it!  It will take less than a minute to melt.  

For the chocolate, you may use dark chocolate chips or your favorite dark chocolate bar (chopped into small pieces).
