This is one of the best, and easiest, ways to cook chicken that is fall-off-the-bone delicious. There’s nothing better than walking in your house at dinner time, to the smell of this chicken dish waiting for you.
Mix up the veggies based on what you like or what you have on hand. I’ve combined leeks, sweet potatoes, parsnips & brussels sprouts, but any combo of red-skin potatoes, carrots, celery, turnips, onions or winter squash would all be pretty great too.
