Flounder with a Dijon Thyme Sauce

This is  one of my favorite back pocket recipes.  I love the combination of flavors.  I love that I can whip the sauce up in under 2 minutes.

And I love that I can always find these ingredients in my pantry.  You probably can too.

If you don’t like flounder, use another fish – salmon is amazing with this sauce.  Don’t like fish?  Substitute chicken.

The sauce is pretty versatile.  Besides fish and chicken, I’ve used it on sandwiches, wraps, shrimp and even roasted potatoes.

It may be stored in the fridge for up to 2 weeks. I like to store it in a glass jar with a tight-fitting lid – a mason jar, a recycled almond butter jar or the like.
