These noodles are a great pick for summer picnics, the beach and warm weather parties.
They’re pretty straight forward and easy to throw together – cook the noodles in boiling water, whisk together the sauce ingredients and chop the veggies.
Cook’s tip: the smaller you slice the veggies, the better the will taste – trust me on this.
They may be served as a side dish or an easy main dish. Enjoy them cold, hot or room temperature.
Some soba noodles are gluten-free and others are not, so if you are gluten-free, read the ingredients carefully. I like King Soba brand – they make several different kinds from different flours – my favorite is the black rice because it has the best texture. Take great care to not overcook the noodles otherwise they’ll turn to mush and break apart.
Sweet Ginger Scallion Sauce is the most amazing sauce EVER! You can use it on stir fried veggies, chicken or seafood.
Kids love this dish – one caveat though, you’ll want to serve the sriracha sauce and the cilantro on the side, or omit them entirely, for kids and people who don’t enjoy heat and the flavor of cilantro.
