The tomatoes, balsamic, sausage (or shrooms), basil and cumin take this soup over the top. Seriously, it’s like a flavor symphony for the taste buds. If you’ve only tried green split peas, you gotta try the yellow ones – they’re milder and sweeter.
For a vegetarian version, I either omit the sausage or substitute mushrooms – I like shitake – but any mushroom will do. And if I’m feeling it, sometimes I’ll add the sausage and the mushrooms.
